so you've got a vegan coming to dinner?

you guys! i totally made an awesome, super spongy, delicious coconut vegan cake for little sister while in florida. now... i know you probably think that nothing vegan sounds good. trust me, i know. have you TRIED vegan cheese? really gross. not even vegans like it. but this cake was sooo good that i think you all need to go make one and bless the vegans in your life.

Note 1: The measurements are all in weight, so unless you've got a food scale, you'll have to convert the ingredients to cups and such. i did this by googling things like "how many ounces in one cup of sugar?" also, keep in mind that the ingredients vary in density, so one pound of flour is about 4 cups while one pound of sugar is only about 2.


Note 2: This recipe is probably safe for people who have food allergies, since it contains no nuts, dairy, or eggs. Just make sure that the ingredients come from a company that packages them in a safe, nut free (etc.) environment.


Note 3: You'll have more than half a package of silken tofu left, so try this.
